We have been going out to the beaver pond for 15 years and have only seen them swimming. Our B & B guest, Michaela Otto, who is a professional photographer, caught him on land and took these great pictures.

Plum & Ginger Muffins

I love using seasonal fruit in my breakfast recipes, so here’s one with plums.

2 cups all purpose flour
1/2 cup white sugar
3 1/2 Tsp. Baking Powder
1/2 Tsp. salt
1 cup milk
1/3 cup melted butter
1 egg
1 Tsp. almond extract
1 cup chopped plums
2 Tblsp. diced candied ginger

TOPPING

2 Tblsp. White Sugar 1/4 Tsp. Cinnamon

Preheat over to 375o

In a large bowl, mix together, flour, baking powder, salt & sugar & chopped fruit & ginger. (It is important that the dry ingredients are mixed well before adding the liquid.)

In a separate bowl, combine the egg, milk, almond extract and melted butter. (Stir this well before you add it to the dry ingredients.)

Add this liquid mixture to the dry ingredients, stirring just until moist. (Do not over mix.)

Spoon batter mixture into greased muffin tin, filling 6 or 7 muffin cups. Add 1 fruit slice to top of each muffin. (Muffins will rise above the top when baked.)

Combine sugar and cinnamon and sprinkle over muffins. Bake at 375o for 20 to 22 minutes or until golden.
